Yummy Spinach Pesto

Here's a recipe paraphrased from "The Abs Diet 6-Minute Meals for 6-Pack Abs: 101 Great Tasting Recipes for Every Occasion" published by Men's Health Magazine.

1 Tablespoon olive oil
1/2 cup chopped walnuts
1 crushed clove of garlic
1 cup torn baby spinach leaves
1 teaspoon dried basil
salt and pepper to taste

Saute the walnuts in the olive oil for 4 minutes. Add the rest of the ingredients and cook for 2 minutes, stirring occasionally. Serve over whole wheat or spelt fettucini noodles.
Serves Two.
